One Pan Sausage and Veggies Recipe

2 cups of red potatoes
pound of green beans
1 head of broccoli
1 cup of yellow peppers
2 cups red peppers
9 oz. of smoked sausage
6 tablespoons of olive oil
1 teaspoon paprika
teaspoon of garlic powder
1 tablespoon of dried oregano
1 tablespoon dried parsley
teaspoon of salt
teaspoon of pepper

Preheat oven to 400. Line large sheet pan with foil or wax paper. Chop potatoes into small pieces.
Trim green beans in half. Chop broccoli. Chop peppers into thick squares. Cut sausage into coin size slices.

Place all veggies and sausage on sheet pan. Pour olive oil an dspices on top. Toss and coat all pieces.

Bake for 15 mins. Remove from oven and flip sausage and veggies around. Return to the oven and bake for another 10-15 minutes or until vegetables are crisp, tender and sausage is browned. Sprinkle fresh grated parmesan cheese on top. Serve over rice.
