Minnesota Wild Rice Soup Recipe

1 c. wild rice (not quick cooking)
1/2 to 1 lb. bacon (diced)
1 medium onion
16 oz. package Velveeta cheese
1 qt. half and half
2 cans cream of potato soup
1 tsp. minced garlic
1 Tbsp. black pepper
1/4 lb. butter (optional)

Directions:
Directions:
Fry bacon pieces with onion until crisp. Drain well.

Add rice to boiling water. Simmer (low heat) for 40 minutes. Test to make sure tender before continuing.

Combine Velveeta, half and half and soup. Heat until Velveeta is melted, stirring constantly.


Add rice to Velveeta mixture, along with remaining ingredients. Cook for 15 minutes on low heat.

To make less spicy, reduce amount of black pepper.

I put Velveeta in microwave a bit prior to adding to half and half and soup in order to speed up the melting process.
