2-1/2 c. flour
2 tsp. soda
1 tsp. cinnamon
1 tsp salt
4 sticks (2 cups) softened butter or margarine
1 c, granulated sugar
1-1/2 c. packed brown sugar
4 large eggs
1 tsp. vanilla extract
grated peel of one orange
1 c, white chocolate chips
1 6 oz. package of Craisins
1 c. dried blueberries
1 c. dried pineapple, chopped
6 c. old fashioned rolled oats


Options: Use dried fruit of your choice. The blueberries are rather expensive so if you are feeling frugal you may want to substitute raisins, figs, apricots, etc. Also, nuts work very well in this recipe. And, if you're feeling lazy, you could use the orange flavored Craisins and skip the grating action!

Preheat oven to 375º.

Combine flour, baking soda, salt and cinnamon in a small bowl. Set aside. Beat butter, granulated sugar, brown sugar, eggs, vanilla extract, and grated orange rind in large mixing bowl. Gradually beat in flour mixture. Combine dried fruit and white chips. Stir fruit mixture into batter. Stir oats into batter. Drop by rounded tablespoon onto ungreased baking sheets.

Bake for 10 - 12 minutes depending on your taste for chewy or crisp cookies. Cool on baking sheets for 2 minutes then remove to wire racks to cool completely.

* Hint: I mix my dough and refrigerate it to be baked another day. It gives me time to clean up and also the dough is easier to handle.
