1 1/2 cups sifted all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup butter
3/4 cup granulated sugar
1 egg, beaten
2 teaspoons grated lemon rind
1 Tablespoon lemon juice
3 Tablespoons granulated sugar

Directions:
Directions:
Sift the flour with the salt and baking soda. In small bowl, with mixer at medium speed, cream the butter and 3/4 cup sugar; add beaten egg and the lemon rind. Beat well. At low speed, beat in flour mixture, a little at a time. Then beat in the lemon juice. Refrigerate 1/2 hour. Meanwhile start heating oven to 375º. Grease two cookie sheets. Then shape cookie dough, by tablespoonfuls, into ball;s roll in the 3 Tablespoons sugar until coated. Place 2 inches apart on cookie sheets. With fork, press down each bll till it is flat and found. Bake 10-12 minutes or till light golden. Remove to rack; cool. Makes 25.
