2 1/2 cups all-purpose flour
1 1/4 cups sugar
1 teaspoon salt
2 teaspoons baking powder
2 cups chopped pecans
2 large eggs or 3 small eggs
1 cup plus 1 Tablespoon milk

Directions:
Directions:
Stir the dry ingredients into a large bowl and then add the pecans (freshly shelled, if possible). In another bowl, vigorously beat the eggs and when they are thick and frothy, add the milk. Stir the beaten egg mixture into the dry ingredients. Pour the batter into a well-greased 8 X 4 loaf pan or a 1 1/2 quart casserole dish and bake in a preheated 350 oven for 1 hour. Remove from the pan and cool on a wire rack.
