3 eggs, beaten
¾ cup vegetable oil
¾ cup buttermilk
2 cups sugar
2 TSP vanilla
2 cups all-purpose flour
2 TSP cinnamon
2 TSP baking soda
½ TSP salt
1, 8-ounce can (1 cup) crushed pineapple, undrained
1 cup chopped nuts
1 cup flaked coconut

Frosting:
¼ cup (½ stick) margarine
8 ounces of cream cheese
1½ TSP vanilla
3 cups powdered sugar
2 TBSP heavy cream

Directions:
Directions:
Combine and mix the eggs, oil, buttermilk, sugar and vanilla.

Combine the flour, cinnamon, soda and salt. Stir into egg mixture.

Stir in pineapple, carrots, nuts, and coconut.

Pour into a greased and floured 9 x 13 pan. Bad at 350º for 45-55 minutes.



Mix frosting ingredients and spread on cooled cake.
