3/4 cup cubed rutabagas
2 eggs, separated
1/3 cup unsalted butter
1/4 cup granulated sugar
1/4 cup maple syrup
1/2 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda

Directions:
Directions:
Cook rutabagas in boiling water, mash or puree, draining off liquid to make 1/2 cup. Butter 6 muffin cups. Beat egg whites until stiff. In small saucepan, melt butter, blend in sugar and syrup and stir in egg yolks, beating mixture until smooth. Fold half the beaten egg whites into pureed rutabagas, then fold this mix into the sugar mixture. Sift together dry ingredients and fold into rutabaga mix. Fill muffin cups with batter and bake in preheated oven at 350º 15-20 minutes or till puffed and lightly browned.
