5 cups all purpose flour
3 teaspoons baking powder
Optional 1 1/2 teaspoons salt
2 heaping Tablespoons lard ( 1/3 cup)
2 cups warm water

Make up and keep in jar in refrigerator. Then just add water.

The fry bread of the various Southwest Indian Pueblos is versatile and good, but Tommie's tortillas can't be surpassed for quickness and all around usefulness. Fine sandwich (rather like pita). Wonderful for sopping up sauce and fewer calories.

In large ceramic bowl combine flour, salt, baking powder. Rub in shortening or use margarine with fingertips till mixture is mealy. Rub hands and more lard, and mix and knead in bowl till dough leaves the sides clean and forms a ball. Make a cross on the dough. Cover and let it rest while you do other chores. To bake, twist off lime size balls of dough, roll between palms to finish making round. With a rollign pin, roll each ball out fairly thick, slapping and flapping the dough to make it lively. Bake on a hot griddle iron, like a pancake. When it has large freckles, turn.
