3 eggs
1 c. oil
2 c. sugar
2 c. grated and strained zucchini (set the juice aside)
3 tsp. vanilla
2 c. flour
¼ tsp. baking powder
3 tsp. cinnamon
1 tsp. salt
Directions:
Directions:
Mix the first five ingredients.
Mix the dry ingredients.
Combine well.
Pour into prepared muffin tins.
Bake on 350º for about 25 min, or until toothpick comes out clean.
