Grandmother Upright's Cucumber Pickles

7 lbs. cucumbers, sliced crosswise I use small pickling cucumbers and peel them
2 gallons water
2 cups lime you can usually find this in the cannning section of the store
2 quarts white vinegar
5 lbs. white sugar
1 tablespoon salt
1 teaspoon white mustard seed
1 teaspoon pickling spice
1 teaspoon whole cloves

Slice the cumbers into a large cooking pot preferably a canner. Add the water and lime and soak for 24 hours.

Take the cucumbers out of the lime water and wash in clear water 3 or 4 times to remove the lime. then soak in clean water for three hours.

While the cucumbers are soaking three hours, I mix the vinegar, sugar and spices together stirring occasionally until the sugar is melted.

Drain the water from the cucumbers and put the sugar, vinegar and spices mixture over the cucumbers and let stand overnight.

The next day simmer for 35 minutes and can. Seal the jars in a hot water bath according to the directions on the canning jars.

I call these three day pickles because the process takes three days to complete. So you need to be sure you have all the time to complete all the steps. They are not easy to make but all the family loves them.
