1 pie shell
1 whipped egg (optional)
4 large tomatoes (sliced)
1/2 tsp salt
3 Tlb Parmesan cheese
1/2 cup chopped onion
3/4 cup mayonnaise
2 tsp corn starch
1 1/2 cups grated cheddar cheese
1/4 cup fresh basil or use a couple tsp of dried
s and p to taste

Preheat oven to 375 Line a pie plate with the prepared pie shell. Brush the shell with a whipped egg to stop from getting soggy. Slice tomatoes and sprinkle with salt. Let sit on paper towels for 10 minutes and then pat to dry. Sprinkle crust with Parmesan. Layer tomatoes and chopped onions in pie. In a bowl mix the mayo , basil and cornstarch and shredded cheddar and spread over tomatoes. Bake on bottom shelf for 30 to 35 minutes
