Ingredients:  
1 large bag of spinach
1 diced red onion (save 2 Tbsp for dressing)
1-2 c of sliced fresh mushrooms
2 c Swiss cheese
1 package of bacon (cooked and crumbled)
1 cup of cottage cheese, rinsed and drained
Dressing:
1 Tbsp poppy seeds
c white vinegar
c sugar
1 c oil
Tbsp dry mustard
1 tsp salt
2 Tbsp diced red onion

Directions:

Toss well and add bacon and dressing right before serving.
