2 cups all purpose flour
3 T. granulated sugar
1/4 tsp. baking powder
1/2 cup butter
1/2 cup currants
2 eggs

Directions:
Directions:
Preheat a griddle or heavy fry pan. Grease with unsalted fat.

Sift or blend together flour, sugar and baking powder.
Cut in the butter until crumbly.
Stir in the currants.
Beat the eggs and add to the other ingredients. Mix to a dough.

Roll the dough out to about 1/4 inch thick on a floured surface.
Cut with a floured cookie cutter.

Bake on the preheated griddle.
Turn when golden brown.
Leave on the griddle a few minutes to dry slightly.
(Optional) Sprinkle with granulated sugar while still warm.

We were introduced to them by our mom who treated us to them on more occasions than the traditional Welsh national St. David's Day on March 1st.
