Wash a stem all the apples you can get. Put a big pot. Add water till you can just see it down in the apples.. Cook till mushy. Strain through layers of cheese cloth overnight. Measure juice and cook 4 cups at a time. Stir in 3/4 cup of sugar to each cup of juice (or one cup if its too sour. Taste it) Bring to a rolling boil (Skim as necessary) for about 15 minutes or till it sheets off a spoon (can use a candy thermometer) Put in sterile mason jars with snap lids The more concentrated the juice the faster it jell and the better the flavor - thats why you do it in small batches If it does not jell in 20 minutes forget it. Not going to. Use it for pancake syrup or on ice cream.
