6 oz. uncooked egg noodles
cup chopped onion
1 T. margarine
1 can condensed cream of mushroom soup
cup milk
2 oz. chopped pimiento
1 T. finely chopped jalapeno peppers
1 - 2 cups cut up chicken or turkey
2 cups shredded cheddar cheese
salt and pepper to taste

Cook noodles and drain. Melt butter and add soup, onion, milk, pimiento and jalapeno pepper. Grease a 2 quart casserole. Layer the noodles and half the chicken. Season with salt and pepper. Top with half the soup mixture and half the cheese. Repeat layers. Bake 30 minutes at 350.
