½ cup granulated sugar
½ cup packed brown sugar
½ cup shortening
½ cup peanut butter
1 egg
1¼ cup all-purpose flour
¾ teaspoon baking soda
½ teaspoon baking powder
¼ salt

Directions:
Directions:
Mix sugars, shortening, peanut butter and egg. Stir in flour, baking soda, baking powder and salt. Cover and refrigerate at least 3 hours.

Heat oven to 375º. shape dough into ¾-inch balls. Place 2 inches apart on ungreased cookie sheet. Bake until set but not hard, about 10 minutes. Cool slightly before removing from cookie sheet; cool completely.

We always use a fork to make a checker pattern - After placing balls on cookie sheet, dip fork in flour and press down on ball. Rotate the fork and press down again, to make a square pattern on the cookie.
