1 small eggplant
1 small onion
1 (4-oz) can mushrooms
Garlic to taste
⅓ cup salad oil
1 can tomato paste
cup water
2 Tbsp wine vinegar
cup chopped stuffed olives
3 Tbsp pine nuts
tsp sugar
tsp oregano
Salt and pepper to taste

Directions:
1. Chop fine the eggplant, onion, mushrooms, and garlic.
2. Place in saucepan with oil and simmer 10 minutes.
3. Stir remaining ingredients into pan; cover and simmer 30 minutes.
4. Chill and serve with vegetables, cheese and crackers.
