Cinnamon Raisin Granola Recipe

4 Cups Old Fashioned Oats
1 Cup Shredded Coconut
1/4 Cup Packed Brown Sugar
1/4 Cup Oil
1/4 Cup Honey or Light Agave
1 tsp Ground Cinnamon
1 1/2 tsp Vanilla
1 Cup Raisins

Preheat oven to 350 degrees

In a large bowl, combine oats and coconut
In a saucepan, combine all but vanilla and raisins and bring to a boil
Remove from heat and add vanilla
Pour over oat mixture and stir to coat
Spread in a large shallow baking pan

Bake @ 350 degrees for 15-20 minutes, stirring occasionally

Cool and add raisins

Store in airtight container
