1 lb (2 cups) white dried pea beans
5 cups cold water
2 onions (sliced)
1/2 tsp salt
2 tsp cider vinegar
1 Tlb maple syrup
1 tsp. dry mustard
1/4 cup molasses
1/2 cup ketchup
pinch pepper
1/4 lb of pork or bacon

Rinse the beans and pick out any rocks! Soak the beans over night with the cold water. Drain and add 5 cups of fresh water Bring to a boil and simmer till beans cooked to desired softness. Put the onions in the bottom of slow cooker (or casserole dish) Add next 7 ingredients to beans (plus a pinch of soda - Joe says Gerry adds soda or club soda to stop gas)and stir till mixed. Pour on top of onions Add cut pork to top and cook in slow cooker or in oven at 250º for 7 hours.
