4 chicken thighs
1 can pineapple
1½ tablespoons cornstarch
¼ cup vinegar
½ cup brown sugar, packed
1 teaspoon ground ginger
salt
pepper
soy sauce

Directions:
Directions:
Trim fat of chicken and cut into little chunks. Put chicken in pan and turn on high, seasoning with salt, pepper, and soy sauce. Once cooked, take chicken out and put into bowl, leave juice in pan.

Drain juices from canned pineapple, and mix in cornstarch until dissolved. Add mixture to chicken juice in pan. Add vinegar and brown sugar. Turn burner on medium, and stir until boils and starts to coagulate. Turn off burner and remove pan from heat. Add ground ginger, stir, and add chicken to mixture. Mix in chunks of canned pineapple.
