1 lb yellow squash
2 tbsp corn oil
1/2 medium onion, chopped
1 red bell pepper, diced
1 jalapeno, chopped
1/4 tsp oregano
1/4 cup milk
1 can hominy
2 tbsp sour cream
1 cup cheddar cheese
1 cup crushed tortilla chips

Directions:
Directions:
Wash and chop squash, set aside. In a skillet over medium heat; combine oil and onion; cook until golden. Stir in squash, bell pepper, jalapeno, and continue cooking til vegetables are tender. Stir in milk, hominy, and sour cream. Remove from heat and spoon into prepared baking dish. Top with cheese and crushed tortilla chips. Bake at 350 degrees about 20 - 25 minutes. Serve hot.
