1 medium potato, boiled and cooled
1 can of salmon, drained and mashed
1 egg, lightly beaten
2 T finely grated carrot
2 T finely grated zucchini
2 T gruyère cheese
2 T flour
2 T olive oil
Lemon wedges,
Slices of tomato
Squares of sour dough or baguette

Directions:
Directions:
Mash the potato and salmon together in a bowl.
Add the egg, carrot, zucchini and cheese.
Mash and mix.
Form croquettes with about 1 T of the mixture.
Roll them in flour. Be sure not too much.
Heat oil in a small non stick frying pan.
Cook the croquettes until golden on all sides.
Place on paper towel.
Serve with lemon wedges, slices of tomato and fresh bread.
