1 and a quarter c. confectioner's sugar
One eighth tsp. cream of tartar
1 egg white

Directions:
Into small bowl, sift sugar and cream of tartar. (Sifting is important.)
Add egg white.
With mixer at medium speed, beat mixture until stiff. (A knife drawn through it will leave a clean path.)
Keep icing in the bowl covered with a damp kitchen towel to prevent drying and hardening.at
