1 # asparagus chopped to 1/2" pieces
1 medium yellow onion, chopped
1 garlic clove, minced
2 Tbl. fresh parsley, chopped
1 tsp. ground thyme
6 oz. Gruyere cheese, grated
8 eggs or 32 oz. egg substitute
1/4 tsp.black pepper

Directions:
Directions:
Saute onion and garlic until onion is clear. Spread evenly in 8" x 11" casserole. Add asparagus, evenly spread. Sprinkle cheese over all.
Mix together other ingredients and pour over veggies.
Bake 45 mins in 350 º oven. Let sit 10 mins before cutting.

I was given the original frittata recipe by a neighbor in San Lorenzo. I made different versions for years until I finally liked this one.
