1 T olive oil
3 large leeks
1 c celery chopped
4 c broth
3 c diced potato
1 c carrot
3/4 tsp thyme
1/2 tsp salt
1/4 tsp pepper
plain yoghurt
dill

Directions:
Directions:
Heat oil in a soup pot. Add leeks and celery. Cook until slightly softened. Add broth, potato, carrot, thyme, salt and pepper. Bring to a boil and let simmer until vegetables are softened. Purée. Top with plain yoghurt and dill to taste.

This is another quick school night soup that they all like. I have never exactly followed the recipe, and we always make a triple or quadruple batch. It freezes well.
