4 T coconut oil
6 carrots sliced
4 onions chopped
1/2 turnip, chopped (or more)
4 cloves of garlic...or more
2 T ginger minced
2 tsp cumin
1 tsp salt
1/2 tsp pepper
6 c broth
1 1/2 c red lentils

Directions:
Directions:
Heat oil in a saucepan. Add carrots, onions, garlic, ginger cumin, salt, and pepper. Cook until onions are soft, then add broth and lentils. Bring to a boil. Cover and simmer for 20 min (until lentils are soft). Purée and serve topped with plain yogurt.

This is a quick school night soup recipe that they all like.
I keep ginger in the freezer in a container and grate it into recipes - skin and all. Much easier than mincing, and it keeps for ages. I keep Thai chilis in the same container. I can add a little to my bowl without freaking Molly out.
Alternatively, omit the ginger and cumin and add thyme. Also yummy. More kid friendly.
