Spaghetti Sauce Recipe

12 Medium size Tomatoes or 5 1 lb cans of Whole Tomatoes with liquid
1 T Olive oil
1 large Onion chopped ( 1 cup )
1 Clove Garlic chopped
1 Large Green Pepper seeded and chopped
1 t Salt
t Black Pepper
1 t Dried Leaf Basil, crumbled or 1 1/2 T Fresh Basil, chopped
t Dried Leaf Oregano, crumbled
2 T Minced Fresh Parsley

Peel tomatoes, core and quarter
Heat oil in heavy kettle or Dutch oven
Add onion, garlic and pepper.
Cook and stir over medium heat until vegetables are soft, not brown
Add tomatoes, salt, pepper, oregano, and basil
Cook, stirring slowly over medium heat approximately 1 hr or until sauce has thickened.
Taste for seasoning
Stir in parsley
