2 T. olive oil
c. finely chopped onions
10 oz. fresh spinach, chopped
1 T. fresh dill (1 tsp. dried)
- c. toasted almonds, finely chopped
1 T. lemon juice
2 lbs. flounder fillets

Directions:
Directions:
Preheat oven to 375
Saute onions in oil until translucent.
Add the chopped spinach and dill and cook covered until the spinach is wilted.
Remove from heat, add the almonds and lemon juice and allow to cool.
Rinse the flounder and pat dry.
Spoon a small amount of the spinach filling onto each fillet and then roll it up.
Place the rolled fish in an oiled baking pan and bake covered for 20-25 min. until fish is tender and flaky.
