½ c. freshly grated Parmesan cheese
½ c. chopped, fresh parsley
½ c. chopped, toasted almonds
1 T. fresh basil (1 tsp. dried)
2 lbs. flounder fillets
3 T. lemon juice
3 T. melted butter

Directions:
Directions:
Preheat oven to 375º
In a small bowl, mix together Parmesan, parsley, basil and toasted almonds.
Rinse the flounder and pat dry.
Spoon some filling onto one end of each fillet and then roll it up.
Place the rolled fish into buttered baking pan.
Pour the lemon juice and melted butter over the fish.
Sprinkle any remaining filling on top.
Bake uncovered for about 30 min. until fish flakes and the rolls are cooked through.
