Ingredients:  
3 c Flour
2 t Baking Soda
3 t Baking Powder
Mix in bowl

Beat separately:
3 c Sugar
3 t Cinnamon
3 Beaten Eggs

Directions:
Directions:
Combine both bowls. Then add:
3 t Vanilla
1 c Oil
3 c finely shredded and pealed zucchini
1 t Salt

Place in 2 bread pans and bake 50-60 minutes at 350

Mom and I used to make Zucchini bread in her kitchen at the farm. I remember a day when we made over 100 loaves. Jennifer was just a newborn and sat in her little chair while we baked.
