"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
◾8oz Cream Cheese
◾1 cup mexi blend cheese
◾1 cup mozzarella cheese
◾1 tablespoon ranch seasoning
◾2 jalapeno peppers seeded and diced (to make them hotter 3-4 peppers)
◾1 package 50 count small wonton wraps

Directions:
Directions:

The first step is to mix the cheeses, ranch and peppers together in a bowl. You can even make the filling the day before if needed or make it and use it right away… either works just fine. Open your wonton wraps lay each wrap out onto a flat surface. Put a small drop of filling into the middle of each wrap. Get a small bowl of water, dip your finger into the water and wet the edge of the wonton. Fold in half, the water will SEAL the edges together.
Fry the wontons in oil over medium-high heat. They cool really fast, 15-50 seconds on each side, you will need to flip them once for even cooking. Take out of the hot oil, drain on a paper towel. If you want you can even bake them, but I prefer the fried ones!
