Garlic Chicken Recipe

1 lb skinless, boneless chicken breasts
1 cup water
3 tbsp reduced sodium soy sauce
1 tbsp cornstarch
2 tbsp cooking oil
10 chopped green onions
1 cup thinly sliced fresh mushrooms
12 cloves garlic, peeled and thinly sliced
1/2 cup sliced water chestnuts
Hot cooked rice


Cut chicken into bite- size pieces and place in a resalable plastic bag. For marinade mix water, soy sauce, and broth. Pour marinade over chicken in back and seal. Marinate in the refrigerator for 30 minutes. Remove chicken; reserve marinade. Stir cornstarch into marinade; set aside.
Heat oil over medium-high heat in wok. Add green onion mushroom, and garlic; cook and stir 1 to 2 minutes or until tender. Remove vegetables from wok. Add chicken to wok; cook and stir 2 to 3 minutes or until no longer pink. Stir marinade mixture; add to center of wok. Cook and stir until thickened and bubbly.
Return cooked vegetables to wok, add water chestnuts. Cook and stir until combined. Serve with hot cooked rice.
