1 c warm water
1 pkg yeast
⅔ c sugar
1 tsp salt
⅔ c shortening (or butter)
2 eggs
1 c mashed potatoes
7-7 c flour

Directions:
Directions:
Oven 400
Dissolve yeast in warm water. Stir in sugar, salt, shortening, eggs and lukewarm mashed potatoes. Add flour with hands until dough is easy to handle. Put on dough board and knead. Place in greased bowl; cover with damp cloth. Place in refrigerator if not using soon. Shape into rolls, cover and let rise until double in size, about 1-2 hours. Bake at 400 for 12-15 minutes. Makes about 4 dozen rolls.
