5 strips bacon, cut into inch pieces
1 cup chopped onion or two bunches of green onions
2 large carrots, coarsely chopped
2 celery stocks, coarsely chopped
3 large russet potatoes cut into small cubes
1 teaspoon dried marjoram, crumbled to release fragrance
1 teaspoon dried thyme, crumbled to release fragrance
1 teaspoon freshly ground pepper
7 cups chicken stock or broth
cup canned milk (or more, as needed)

Cook bacon in a large heavy saucepan over medium-high heat until fat is rendered. Add onion, carrots, and celery to pan and cook over medium-high heat until tender, stirring occasionally, about 15 minutes. Mix in potatoes and spices. Add stock and bring to boil. Reduce heat and simmer until potatoes are tender, stirring occasionally about 30 minutes.
