Heat 1 inch of oil (peanut oil has a higher smoke point than others, making it ideal for frying. From a dietary standpoint, peanut oil is valued for its high percentage of omega-6 polyunsaturated fatty acid whose anti-inflammatory properties have been extensively highlighted.

Mix together egg and milk until well incorporated. Whisk together flour, salt, and baking powder. Add flour mixture and onion. Fry in hot peanut oil until golden brown.

I am an onion weenie--I prefer to have the taste of onion but not the crunch. My mother preferred big pieces of onions, green peppers, celery. Not ideal. But even I couldn't resist her hushpuppies!
