2 cups unbleached flour
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
3 tablespoons sugar
2 large eggs, lightly beaten
3 cups buttermilk, "Bulgarian style" if possible
4 tablespoons unsalted butter, melted

1 tablespoon melted butter for griddle

Preheat griddle to 375º
Test the griddle with a few drops of water to be sure it sizzles.

Whisk flour, baking powder, soda, salt, and sugar in a bowl.

Whisk eggs, buttermilk, and cooled butter.

Using a 1/2 cup ladle, pour batter in pools, 2 inches apart.

When dry around the edges and bubble, flip each cake.

Cook until golden on the bottom, about 2½ minutes. Test the middles with your fingers. It should feel a little bit springy.

This recipe can be halved.

Until I had a properly functioning griddle I thought I was destined to fail at making hot cakes. Then I was a horrific flipper. Again, a matter of having the proper tools.
