1 package pre-made puff pastry (available frozen from Safeway or most stores)
1/2 pound wedge of Brie with while mold on and cut into 1 inch cubes
1 jar of apricot preserves or jam
egg wash ( 1 egg beaten with 1 TB of water)


Directions:
Directions:
1 Thaw pre-made puff pastry according to the package directions and cut into 4 x 4 inch squares Preheat oven to 400ºF and prep a baking tray or a muffin tin with a nonstick spray
2 Place the brie cubes on top of the pastry squares and top with a dollop of the preserves. Pull edges of the pastry up and around the mixture to cover, finishing with a twist.
3 Brush each piece with egg wash and bake for 15-20 minutes or until golden brown
4 for extra pizzazz serve the remaning preserves on the side for dipping.

or swap our the apricot jam for other jams - maybe a spicy iine with habanero

this makes 4 first course or large appetizer serviings
