1 ½ cups flour
1 tsp. soda
½ tsp. salt (optional)
1 ½ cups butter or margarine
1 cup brown sugar, packed
1 cup white sugar
2 eggs
3 cups quick rolled oats
½ cup chopped nuts (optional) I leave the nuts out
1 ½ cups fine or medium coconut

Directions:
Directions:
Mix flour, soda and salt together. In a bowl, mix butter, sugars and
eggs  together  until  fluffy.  Add  flour  mixture,  rolled  oats  and coconut. Divide into three and roll in waxed paper. Refrigerate over night. 
The next day, slice and place 2 inches apart.
Bake at 350º F. for 10 minutes until lightly brown.
