Jarlsberg Fish Fajitas Recipe

1 lb flounder fillet, cut lengthwise into 1/2 inch strips
1/4 cup fine breadcrumbs
1/2 tsp salt
1/2 tsp pepper

1 cup sliced onion
1 cup red bell pepper, cut into strips
1 cup chopped green tomatoes
1 tsp cumin, optional
4 [10 in) flour tortillas

1 cup Jarlsberg lite cheese
Lime wedges

Directions:
Directions:
Preheat oven to 425°F
Combine fish, breadcrumbs, salt and pepper in plastic bag; shake to coat.
Place fish in non-stick baking pan.
Spray fish lightly oil and roast 15 minutes, fish is opaque and flakes easily.

In large non-stick skillet, saute onion, red pepper, green tomatoes and cumin (if desired) until just tender--about 5 minutes.
Transfer veggies to warming plate.
Heat the flour tortillas according to package directions.

Divide cheese evenly between tortillas, top with vegetables, fish and cilantro (if using).
Squeeze juice from lime wedges overtop, then roll to serve.
