Preheat oven to 350º
Bake on a cookie sheet covered with parchment paper
Bake about 15 minutes, until nuts are slightly brown

1 cup unbleached flour
¼ cup packed light brown sugar
½ cup room temperature butter
1 teaspoon pure vanilla
¼ teaspoon salt
1 egg, separated
1 cup chopped pecans
Apricot preserves, or Plum jam for filling the thumbprint

Preheat oven to 350º
Bake on a cookie sheet covered with parchment paper
Bake about 15 minutes, until nuts are lightly browned

With mixer at low speed, beat together flour, sugar, butter, vanilla, salt, and egg yolk; add vanilla. Increase speed to medium and mix 1 minute. Shape dough into small balls. Chill half an hour. In a small bowl, beat egg white until foamy. Dip each ball into egg white and then into the nuts. Push thumb in the middle of each ball (push almost through the ball to avoid losing the indentation during baking). Cool completely on racks. Fill the middles with your choice of preserves or jam.
