1/2 cup uncooked rice
1 cup water
1/4 tsp. Salt
1 onion, chopped
1 lb.ground beef
2 cups canned tomatoes with juice
1 pt. corn, 2 tsp. salt

Directions:
Directions:
Place rice, water, 1/4 tsp. salt in saucepan.
Cover and bring to boil.
Turn heat on low and cook for 15 minutes. Then drain.
Brown ground beef and chopped onion in large skillet.
Stir in rice, corn, tomatoes and 2tsps. salt.
Pour into greased casserole dish.
Bake @ 350º for 30 minutes.

This was a recipe the girls brought home from 4-H. It was a good "one-dish stretcher" for 7 of us.
