3-4 chicken breasts, cut into 1-inch cubes (recipe calls for 6 chicken breasts, but I like lots of sauce)
1 can of cream of chicken soup
1 cup mayonnaise
1/8 cup lemon juice
1 Tbsp. curry powder
Cooked white rice

Optional:
Broccoli florets
grated Cheddar cheese

Oven Method:

Put chicken (and optional broccoli) in a 9 x 13 pan.
Mix together the soup, mayo, lemon juice, and curry powder
Pour over chicken, (sprinkle with optional cheese), and bake for 1 hour at 375.
Serve over rice.

Stovetop method:

Cook the chicken in a large pot until just white.
Add the rest of the ingredients (except optional cheese) and simmer for approx. 15 minutes. (I somewhat pre-cook) the broccoli in the microwave when using this method.
Add the cheese and let it melt slightly before serving over rice.
