Speggetti Sauce for Canning Recipe

29 c. tomatoes
1 c. onion
⅓ c. Parsley
2 T. salt
2 bay leaves
3 T. oil
c. green pepper
c. sugar
1 T. oregano
1 T. garlic
1 T pepper
4 cns (6 oz. each) tomato paste

Cook as for juice. Heat oil over med heat; add onion, green pepper, and garlic. Cook until tender. Add remaining ingredients. Bring to boil; reduce heat to low and simmer 2 hrs. Remove bay leaves before canning. Follow directions from your favorite canning book to process.
