Ingredients:  
1 cup | shortening or butter
1 cup | mashed carrots or sweet potato cooked
1 cup | sugar
1 | egg
1 cup | nuts
2 cup | flour
2 TBL | baking powder
pinch | salt
Orange frosting | beat 4 TBL butter, tsp vanilla, 3 cups powder sugar, tsp salt, 3 to 4 TBL orange juice, orange zest

Directions:

Cream butter and sugar. Add carrot or sweet potato. Sift flour and dry ingredients. Combine dry and cream ingredients. Bake at 375 degrees for 10 minutes. Frost while hot.
