Chcken Curry Over Rice Recipe

2 cups water
3/4 cup butter
1/2 cup celery, sliced
1/2 tsp. salt
1/2 cup green onion, or yellow onion
1/4 cup dried parsley flakes
1 cup rice
4 chicken breasts
1 can cream of chicken soup
1/2 cup milk
1/2 cup mayonnaise
1/4 tsp. curry powder
1 T. dried parsley flakes

Bring first 6 items to a boil. Add rice and return to boil. Cover and simmer for 15-20 minutes. Cook chicken breasts and chop up. In another bowl, combine last 5 ingredients. Mix all together and beat until smooth. Add chicken and sauce to rice mixture and stir well.
