The Cake

1 cup oatmeal
½ cup butter
1 cup brown sugar
2 eggs
1 cup white sugar
1 tsp. vanilla

1½ cups flour
1 tsp. salt
¼ tsp. nutmeg
1 tsp. baking soda
1 tsp. cinnamon

1½ cups nuts
1 tsp. vanilla

Directions:

Pour 1¼ cups boiling water over oatmeal in a bowl, cover, let sit for 20 minutes.
In a large bowl, beat butter til creamy, add sugars and beat well. Blend in vanilla and eggs, add oatmeal and mix well. Sift together dry ingredients, add to large bowl, add nuts and vanilla, mix well.
Pour into a 15 x 10 pan (or something similar). Bake at 350º for 50 - 55 minutes.
 

The Yummy Topping

¾ cup melted butter
6 Tbsp. whipping cream
1½ cups coconut
¾ cup brown sugar
¾ chopped nuts
1½ tsp. vanilla

Mix and pour over cake, broil until bubbly and brown, about 5 minutes.

This cake got its name because it seemed someone always made it for a funeral, it serves a lot of people. When I asked what it was called, no one knew, I got tired of saying, "you know, the one with the nuts and coconut?" so Funeral Cake it became.
