1 cup white sugar
1/3 cup water
1/3 tsp. crean of tartar
2 egg whites
1-1/2 tsp. vanilla

Directions:
Directions:
Mix sugar, water and cream of tartar in small saucepan. Boil slowly to soft ball stage. Keep saucepan covered first 3 minutes. This keeps it from crystallizing.
Beat egg whites until stiff.
Pour hot syrup slowly in a thin stream into the stiffly beaten egg whites, beating constantly.
Add vanilla.

Walt's favorite cake was angel food and, so, for his birthday I would put this icing on his cake! He was diabetic, so the icing was not a good idea too often. That's why it was a special treat on his special day!
