2 Tbsp butter
4 cups sliced yellow squash
1 medium onion, chopped
2 eggs
1 cup grated cheddar cheese
1 cup milk
2 Tbsp butter
1/4 tsp cayenne pepper
1/2 tsp salt
1/2 tsp black pepper
1 sleeve Ritz crackers or Corn Flake crumbs, crushed.
(do not crush too much, or crumbs will soak into casserole.)

Preheat oven to 350º
Melt 2 tbs butter in medium skillet. Add squash and onions and cook until tender.
To a large bowl. add eggs and whisk lightly. Add cheese and milk and whisk into egg until well combined. Add cooked squash and onions to egg mixture and mix until well combined. Melt remaining 2 tbs butter and add to squash mixture.
Add cayenne pepper along with salt and pepper. Stir until well combined.

Spray 9x13 casserole dish or round casserole dish with cooking spray and pour squash mixture into dish. Top with
crushed crumbs.

Bake in preheated oven for 45 minutes, or until top has lightly browned and casserole does not "jiggle" when the dish is moved.
Allow to sit 3 minutes before serving.
