"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Cook beef and onion in skillet. Drain, reserving the grease. Set meat aside. Add celery and cabbage with the reserved grease to the skillet and saute until tender. Drain thoroughly.

Put all the ingredients into a large bowl, along with the eggs, and mix together. Add garlic salt and soy sauce according to your taste.

Spoon about 3 tablespoons of mixture into the center of each egg roll wrapper, fold in corners and roll. Seal the edges with a little dab of water. Add oil to a clean skillet and fry egg rolls, seam side down first, until golden brown on all sides. Store leftovers in refrigerator.

These were not only Mom's favorite but also mine and Dad's. We would make a meal out of just these.
