Liquid Mix
5 cups Sugar
1 bag Milk 2%
3 medium Lemon Zest (or 2 large Lemon Zest)
1 tbsp Salt
12 large Eggs (room temperature)
1 cup Vegetable Oil
1/2 lbs Butter - Salted (soft/room temperature)

Dry Mix
18 cups Flour

Yeast Mix
1/2 cup water
2 tbsp Yeast (Quick Rise Instant) or 2 packages
1 tbsp Sugar

Egg Wash
2 large eggs beaten and strained

Vegetable oil to coat a mixing bowl
Butter to coat pans

In a medium Bowl
Beat eggs

In a Medium Pot (on the stove)
1. Warm milk and sugar to dissolve sugar
2. Add salt to liquid mix
3. Add lemon zest to liquid mix
4. Bring liquid mix to a boil
5. Add butter and oil to liquid mix

Cool milk mix
Option 1 - Leave to cool
Option 2 - Place pot in a ice water bath

6. Add eggs to cooled milk mix
7. Split liquid mix and flour in half (due to volume of ingredients, process in 2 batches)
8. Add liquid mix into a mixer (medium speed)
9. Slowly add the flour
10. Mix for an 30 minutes

In small bowl
Add water, yeast and sugar
Let set for 10 mins

Coat a steel large mixing bowl with vegetable oil

11. Add yeast mix to mixer until fully incorporated
12. Move mixed batter into steel mixing bowl
13. Knead batter for 2 minutes
***Bless with the sign of the cross
14. Dust top with flour
15. Set aside in a warm room, covered with a blanket to rise until batter doubles in size (can take hours)
Grease pans with butter/margarine
16. Floor the counter and divide batter into 10 sections
17. Fold and roll batter into ball
18. Place in pans and cover with plastic and blankets to rise until batter doubles (can take hours)
19. Brush egg wash to cover all 10 loafs
20. Use scissors to snip 3-4 opening in the top of each loaf
21. Bake at 275º for 45 minutes (until top is light brown)
